Koy Shunka: Hideki’s Innovation and Fusion with Josper

A transformation is more than a renovation: Chef Hideki Matsuhisa’s approach combines traditional Japanese gastronomy with Mediterranean-Catalan ingredients. With a Michelin star, his drive for innovation in Japanese cuisine knows no bounds.

The new kitchen at Koy Shunka is a collaborative project between Chef Hideki Matsuhisa and his team, architect Pere Cortacans, and Josper.

Since the gastronomic and architectural aspects are in the hands of great friends, at Josper we focused on designing and developing this new kitchen for the restaurant—one of a kind, custom-made by and for Koy Shunka.

A fully efficient professional kitchen, powered solely by charcoal: the combination of combustion chambers with oven functionality (in true Josper style) fuels the cast steel Coup de Feu, becoming the heart of a U-shaped space designed for open service. An extraordinary feat of engineering and architecture.

This monoblock kitchen also features a retractable Josper Mangal with four grilling levels, movable bars adaptable to various heights, and the option to add iron grills and/or tempering plates. As always: maximum versatility to enhance and support the outstanding work in restaurant kitchens!

We included a recirculating water system to prevent overheating of the countertop and the Coup de Feu, as well as a smoke extraction system with Josper technology (filter and fireproof system to prevent flames and make cleaning easy).

A reinforced steel cabinet with an aged finish, featuring regulation controls, ignition and adjustment knobs, independent controls for the water circuits, and vents for the Coup de Feu… Comfort, efficiency, versatility, and Hideki’s personality, all for Koy Shunka, crafted by Josper.

Koy Shunka has already opened its doors with this new and stunning open kitchen, where you can watch Hideki’s brilliant team at work, alongside the fully renovated restaurant. A tasting menu experience to enjoy with all five senses—something everyone should try.
