A<em> cal\u00e7ot<\/em> is a kind of scallion-leek, or elongated white onion which is tender and sweet, cultivated exclusively to be cooked over a fire and the embers of the wood from a vine shoot. When this onion grows, farmers cover it with soil to prevent it from being exposed, so it continues to grow in search of light. It is consumed in late winter and early spring, and it is common to hold a <em>cal\u00e7ot<\/em> barbeque, or <em>cal\u00e7otada<\/em>, using any excuse. The <em>cal\u00e7otada<\/em> celebration is originally from the valley of Valls, in the region of Alto Campo, Tarragona. But in recent times it has spread like wildfire, and is celebrated practically all throughout Catalonia; it has become a true social event and it\u2019s even possible to find <em>cal\u00e7otadas<\/em> in many other parts of Spain.<\/p>\n\n\n<figure><img decoding=\"async\" src=\"https:\/\/jospergrill.com\/\/wp-content\/uploads\/2019\/03\/puerro-1024x544.png\" alt=\"El puerro, antes de ser asado en el Josper\" \/>\n\nA leek waiting to be grilled in the Josper oven<\/figure>\n<p>&nbsp;<\/p>\n\n\n<p>And leeks? Aren\u2019t they a type of <em>cal\u00e7ot<\/em>? Well, yes, there\u2019s something to that: they are indeed cousins, but with different features. It can be a good substitute when there are no <em>cal\u00e7ots<\/em> on hand. But at ElBarri, Albert Adri\u00e0 goes above and beyond by bringing these relatives together in a highly original dish with lots of flavour and the touch of the Josper gastronomic charcoal.<\/p>\n<p>&nbsp;<\/p>\n<p>Ingredients:<\/p>\n\n\n<p>-One large leek<\/p>\n\n\n<p>-A handful of mini cal\u00e7ots<\/p>\n\n\n<p>-Salt, oil<\/p>\n\n\n<p>-Black sauce: 160 g. of green sauce and 200g. of huitlacoche (Mexican truffles)<\/p>\n\n\n<p>-A handful of pecans<\/p>\n\n\n<p>YAnd here is video featuring the magic of Adri\u00e0 and ElBarri, with all the flavour that Josper brings to it:<\/p>\n\n\n<figure>\n<iframe title=\"Puerro al carb\u00f3n con cal\u00e7ot \/ Charcoal leek with cal\u00e7ot \u00b7 elBarri by Albert Adri\u00e0 and Josper\" width=\"500\" height=\"281\" src=\"https:\/\/www.youtube.com\/embed\/tNBfL8IiuVE?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" referrerpolicy=\"strict-origin-when-cross-origin\" allowfullscreen><\/iframe>\n<\/figure>\n\n\n<p>To prepare the leek, cut it right where it begins to turn green and bury it in the embers of the Josper oven for 3 minutes:<\/p>\n\n\n<figure><img decoding=\"async\" src=\"https:\/\/jospergrill.com\/\/wp-content\/uploads\/2019\/03\/puerro-enterrado-en-brasas-josper-1024x546.png\" alt=\"Leek buried in the embers of the Josper oven\" \/>\n<figcaption><em>A leek fulfills its dream<\/em><\/figcaption>\n<\/figure>\n\n\n<p>Once finished with the charcoal, empty the leek to make room for the mini cal\u00e7ots and the sauce, applying a special cut:<\/p>\n\n\n<figure><img decoding=\"async\" src=\"https:\/\/jospergrill.com\/\/wp-content\/uploads\/2019\/03\/vaciando-el-puerro.png\" alt=\"The grilled leek is emptied.\" \/><\/figure>\n\n\n<p>Now the sweet mini cal\u00e7ots come into play: remove their roots and sprinkle them with oil:<\/p>\n\n\n<figure><img decoding=\"async\" src=\"https:\/\/jospergrill.com\/\/wp-content\/uploads\/2019\/03\/mini-calcots-en-aceite-1024x552.png\" alt=\"Mini cal\u00e7ots, before being grilled in the Josper\" \/><\/figure>\n\n\n<p>Like the leek, they also get put in the Josper, only this time on the grill:<\/p>\n\n\n<figure><img decoding=\"async\" src=\"https:\/\/jospergrill.com\/\/wp-content\/uploads\/2019\/03\/calcots-en-el-josper-1024x548.png\" alt=\"Cal\u00e7ots on the grill of the Josper oven.\" \/><\/figure>\n\n\n<p>Take out the cal\u00e7ots, remove the outer layer and dice. Prior to this, you will have prepared a black sauce, with 160 g. of green sauce and 200 g. of huitlacoche, (a delight known by Mexicans as the food of the gods), with which you will fill the leek together with the mini cal\u00e7ots.
