This is the Josper braised aubergine with textured tomato, basil and goat&#8217;s cheese, a spectacular and simple dish.<\/p>\n\n\n\n<p>First of all, let us mention the curiosity that the aubergine, which belongs to the Solanaceae family like the tomato, tobacco or pepper, is not a vegetable&#8230; It is actually a fruit and, as we said, the best way to prepare it is to bake it: this technique improves its texture, concentrates the flavours and consolidates its flesh.<\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter size-large\"><img fetchpriority=\"high\" decoding=\"async\" width=\"1024\" height=\"682\" src=\"https:\/\/jospergrill.com\/\/wp-content\/uploads\/\/berenjenas-al-josper-1024x682.jpeg\" alt=\"Berenjenas al Josper\" class=\"wp-image-39873\" srcset=\"https:\/\/jospergrill.com\/wp-content\/uploads\/berenjenas-al-josper-1024x682.jpeg 1024w, https:\/\/jospergrill.com\/wp-content\/uploads\/berenjenas-al-josper-720x480.jpeg 720w, https:\/\/jospergrill.com\/wp-content\/uploads\/berenjenas-al-josper-300x200.jpeg 300w, https:\/\/jospergrill.com\/wp-content\/uploads\/berenjenas-al-josper-768x512.jpeg 768w, https:\/\/jospergrill.com\/wp-content\/uploads\/berenjenas-al-josper.jpeg 1181w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n\n\n\n<p><strong>Aubergines with Josper<\/strong><\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Josper braised aubergine with tomato textures, basil and goat\u2019s cheese<\/strong><\/h3>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>Ingredients<\/strong><\/h4>\n\n\n\n<p><\/p>\n\n\n\n<p>-Aubergine<\/p>\n\n\n\n<p>-Cherry tomato<\/p>\n\n\n\n<p>-Pesto (olive oil, pine nuts, basil, parmesan cheese, fresh basil, dried tomatoes, goat\u2019s cheese, olive oil, salt and pepper).<\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>Preparation, step by step<\/strong><\/h4>\n\n\n\n<p><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Cut the aubergine into slices about 1 cm thick and season with salt and pepper.<\/li>\n\n\n\n<li>The cherry tomatoes should be seasoned with salt and pepper to taste and placed in a 1\/3 Josper tray.<\/li>\n\n\n\n<li>With the Josper&#8217;s air inlet closed, the upper register at level 2-3, and a temperature between 250 and 300 degrees, place the tray with the cherry tomatoes and aubergine directly on the lower rack of the oven.<\/li>\n\n\n\n<li>After 2 minutes, turn the aubergine and move the tomatoes and leave for a further 2 minutes.
