{"id":3765,"date":"2019-07-03T11:30:05","date_gmt":"2019-07-03T11:30:05","guid":{"rendered":"http:\/\/jospergrill.com\/?p=3765"},"modified":"2021-02-02T15:25:35","modified_gmt":"2021-02-02T15:25:35","slug":"codorniz-de-bresse","status":"publish","type":"post","link":"https:\/\/jospergrill.com\/es\/codorniz-de-bresse\/","title":{"rendered":"ElBarri by Albert Adri\u00e0 y Josper, receta 12: Codorniz de Bresse rellena de berenjena"},"content":{"rendered":"\n<p>La regi\u00f3n de Bresse es la capital francesa de las aves de corral, especializada en pollos (es la \u00fanica especie de ave de corral con la clasificaci\u00f3n francesa \u201cAppelation d&#8217;Origine Controlee\u201d, generalmente asociada al vino), codornices, p\u00e1jaros y conejos.<\/p>\n\n\n\n<p>Su popularidad se\ndebe a las estrictas normas para la crianza y cr\u00eda de estas aves que producen una\ncarne tierna muy apreciada por los entendidos, y utilizada por los mejores cocineros.\n<\/p>\n\n\n\n<p>Con una producci\u00f3n\nlimitada, las aves se cr\u00edan mayoritariamente en libertad y a base de alimentos\norg\u00e1nicos libres de antibi\u00f3ticos y exclusivamente cultivados en la regi\u00f3n de\nBresse (siendo los principales ingredientes de su alimentaci\u00f3n el ma\u00edz, el\ntrigo, los cereales y determinados productos l\u00e1cteos). <\/p>\n\n\n\n<p>Gracias a su\ndelicada y deliciosa carne, la codorniz de Bresse es perfecta para preparar\neste plato sabroso y saludable que dotaremos de un inusual y sorprendente toque\nperuano. <\/p>\n\n\n\n<p>Ingredientes:<\/p>\n\n\n\n<p>-codorniz de Bresse\ndeshuesada<\/p>\n\n\n\n<p>-berenjena <\/p>\n\n\n\n<p>-majado de aj\u00ed\npanca (o aj\u00ed especial)<\/p>\n\n\n\n<p>Es el segundo\nchile m\u00e1s popular en la cocina peruana detr\u00e1s del aj\u00ed amarillo. Recordemos que\nlos chiles son frutas y el aj\u00ed panca (que sabe a baya o ar\u00e1ndanos) dota de un\ntoque ahumado y bot\u00e1nico al alimento cuando se muele en salsas. <\/p>\n\n\n\n<p>50 gramos de\ntahina, 30 gramos de aj\u00ed panca en pasta, 20 gramos de miso blanco, 5 gramos de\nagua mineral.<\/p>\n\n\n\n<p>Procesar los\ningredientes en la licuadora o en un procesador de alimentos. <\/p>\n\n\n\n<p>-salsa\nanticuchera. <\/p>\n\n\n\n<p>Es una salsa t\u00edpica\nperuana, de rico sabor intenso.<\/p>\n\n\n\n<p>50 gramos de\npasta de aj\u00ed panca, ajo y pimienta blanca, comino, or\u00e9gano, sal y vinagre al\ngusto.<\/p>\n\n\n\n<p>Licuar todos los\ningredientes hasta que los ingredientes se emulsionen en la mezcla. <\/p>\n\n\n\n<p>-cilantro fresco<\/p>\n\n\n\n<p><strong>Preparaci\u00f3n:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Asar las berenjenas enteras durante 15 minutos. Quitar la piel y partir a la mitad.
