Porque aparte de la carne sometida a la parrilla, nadie la elabora como \u00e9l, Bittor elabora a la brasa mil y un tipos de productos, desde besugo, cogote de merluza, ventresca de at\u00fan, gambas rojas, t\u00f3rtolas, verdura, huevos, mariscos\u2026 hasta caviar. Bittor fue nombrado <strong>Premio Nacional de Gastronom\u00eda<\/strong> en 2017. Lubinas, gambas rojas, ostras, cabrachos, erizos, calamares\u2026 En el restaurante conducido por <strong>Anna Bocanegra<\/strong>, con ADN de tradicionales pescaderos de Roses y el genial chef <strong>Rafa Zafra<\/strong>, se elaboran todos los productos a la vista de los comensales, productos que pasar\u00e1n en alg\u00fan momento por la magia de su horno de brasa, que aportar\u00e1 el toque ahumado perfecto. Una manera de cocinar a la brasa perfecta para grandes pescados, como el negrito de Roses o las deliciosas gambas rojas. Eso s\u00ed, con un corte espa\u00f1ol -de ah\u00ed lo de Yakitoro-, cocinando muchos otros tipos de producto con otro sabor. Para ello cuenta con una serie de parrillas especialmente creadas para \u00e9l, <strong>robatagrill<\/strong>, con las que logra volver a la esencia de la cocina tradicional, como es la cocina a la brasa. Los comensales rodean las parrillas de carb\u00f3n, disfrutando de platos de fusi\u00f3n a la brasa como caballa al carb\u00f3n con ajada de chorizo, costillas de at\u00fan a la brasa, la pechuga de pollo frito crujiente con salsa agridulce ca\u00f1\u00ed o la pi\u00f1a a la brasa. En su restaurante a la brasa, La Braser\u00eda, especializada en carnes, destaca la vitrina de piezas de larga maduraci\u00f3n, donde se exhibe el producto. Un <strong>horno de le\u00f1a<\/strong> y su brasa son los protagonistas absolutos, y es que adem\u00e1s las carnes se elaboran a la vista de los comensales. Toda una delicia los platos como el steak tartar de buey, el chulet\u00f3n de vaca vieja europea o el entrecot de ternera. Todo pasa por las brasas de su horno brasa, con el que trabajan desde el primer d\u00eda, ajustando el tiro del aire seg\u00fan los platos a elaborar y controlando la temperatura ideal, entre 200 y 250 grados. Y siguiendo las tradiciones culinarias de Oriente, y con la voluntad de fusionarlas con la tradici\u00f3n m\u00e1s espa\u00f1ola, los encargados de Umo instalan una parrilla abierta, un <strong>mangal<\/strong>, para elaborar, como presumen en su web, productos cocinados a la brasa lentamente, gracias a las diferentes alturas que les ofrece su parrilla abierta. Y es que el chef <strong>Gonzalo Armas<\/strong> es un aut\u00e9ntico experto en la t\u00e9cnica de la cocina a la brasa. \u00bfLa prueba? Berenjenas asadas a la brasa con salsa romesco, pimientos de Lodosa a la brasa confitados, aguacate a la brasa relleno de bonito acevichado, pollo picant\u00f3n de caser\u00edo al carb\u00f3n,
