Sin reparos podemos confirmar que la aportaci\u00f3n del equipo de El Bulli marc\u00f3 un antes y un despu\u00e9s en la forma de entender la cocina y de la relaci\u00f3n de sus creaciones con los comensales. Este cambio de \u00e9poca vino marcado por su l\u00edder visible, <strong>Ferran Adri\u00e0<\/strong>, y por un equipo extraordinario de profesionales que desarrollaron todas sus inquietudes en ese laboratorio de la Costa Brava, en Cala Montjoi, Roses.<\/p>\n\n\n\n<p>Parte de ese equipo y pieza clave era <strong>Albert Adri\u00e0<\/strong>, una persona que se define cocinero \u201cpor azar\u201d. Con 15 a\u00f1os entr\u00f3 en El Bulli, su hermano era jefe de cocina con 22. Seg\u00fan <strong>Albert Adri\u00e0<\/strong>, los 3 pilares en la cocina son: el producto, la t\u00e9cnica y el cocinero, pero la clave est\u00e1 en las emociones, en esa experiencia que despierta en el comensal y que no se puede describir con palabras. La emoci\u00f3n que va del paladar al subconsciente, pasando por el registro de vida que nos acerca a ese recuerdo que adquiere vida con la degustaci\u00f3n del plato.<\/p>\n\n\n\n<p>En l\u00ednea con la emoci\u00f3n que la brasa gastron\u00f3mica transfiere al producto y en base a las t\u00e9cnicas de asado al carb\u00f3n vegetal la relaci\u00f3n de <strong>Josper<\/strong> y <strong>Albert Adri\u00e0<\/strong> ha ido <em>in crescendo<\/em> en los \u00faltimos 5 a\u00f1os. Empezando en el congreso de <a href=\"http:\/\/www.josper.es\/blog\/spanish-hot-dogs-by-albert-adria-elaborados-en-el-josper\/\" target=\"_blank\" rel=\"noopener noreferrer\">San Sebasti\u00e1n Gastronomika 2013<\/a>, pasando por las cocinas del proyecto barcelon\u00e9s <a href=\"https:\/\/vimeo.com\/69877685\" target=\"_blank\" rel=\"noopener noreferrer\">elBarri<\/a>, <a href=\"https:\/\/www.facebook.com\/pg\/josper.charcoal.ovens\/photos\/?tab=album&amp;album_id=1330311917003747\" target=\"_blank\" rel=\"noopener noreferrer\">la experiencia en el White Rabbit Restaurant<\/a>, el Four Seasons Hotels and Resorts y los d\u00edas de PIR Expo Mosc\u00fa en octubre de 2016. Experiencias compartidas que siguen dando sus frutos, como las 13 c\u00e1psulas que estamos presentando estas semanas en los perfiles sociales de Josper.<\/p>\n\n\n\n<p>El producto, la t\u00e9cnica, el cocinero y la m\u00e1quina, el horno carb\u00f3n Josper siendo el primer c\u00f3mplice de la cocina de Albert Adri\u00e0, para llegar a esas emociones intangibles y a la vez tan expresivas en boca y mente de los comensales.
