Y en Europa y Am\u00e9rica, con el auge de la comida a la brasa (por la que est\u00e1n apostando cada d\u00eda m\u00e1s restaurantes por todo el planeta), el estilo robatayaki ha crecido de una forma excepcional. Pero\u2026 \u00bfde d\u00f3nde viene este estilo de preparar la comida a la brasa?<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Origen del robatayaki<\/strong><\/h2>\n\n\n\n<p>El origen de esta t\u00e9cnica hay que buscarlo en la isla de Hokkaido, la m\u00e1s septentrional del archipi\u00e9lago nip\u00f3n. Desde hace m\u00e1s de dos milenios, los pescadores locales han utilizado esta forma de cocinar mientras trabajaban. En un principio necesitaban un recipiente que protegiera la madera de sus embarcaciones del fuego de las brasas de carb\u00f3n de binchotan, as\u00ed que lo consiguieron con una peque\u00f1a caja met\u00e1lica. Futomakis, sashimis, donburis, nigiris, ramen, edamame, sushi, fideos soba\u2026 Platos que resultan incre\u00edbles en la brasa del estilo robatayaki. Pero tambi\u00e9n es ideal para revisitar platos m\u00e1s acordes con el gusto m\u00e1s occidental, con ingredientes y formas de preparaci\u00f3n distinta, sin ir m\u00e1s lejos como todos los basados en la carne, en forma de peque\u00f1as brochetas o pinchos. \u00bfY la fusi\u00f3n de ambos estilos? Si analizamos restaurante a restaurante, efectivamente lo que verdaderamente triunfa aqu\u00ed y all\u00e1 es la fusi\u00f3n de ambas cocinas. Eso s\u00ed, hay algo que no cambia y que siempre ser\u00e1 igual en cualquier latitud: la t\u00e9cnica nipona del control de la brasa y de la cocina, y adem\u00e1s frente a los comensales. Porque el <strong>showcooking<\/strong>, el espect\u00e1culo de ver c\u00f3mo se someten al mandato de las brasas productos de primera calidad, en forma de brochetas o peque\u00f1as porciones, es fundamental en la cocina robatayaki.
