{"id":11193,"date":"2019-10-24T14:24:48","date_gmt":"2019-10-24T14:24:48","guid":{"rendered":"http:\/\/jospergrill.com\/?p=11193"},"modified":"2019-10-24T14:27:45","modified_gmt":"2019-10-24T14:27:45","slug":"poker-gastronomico-en-el-x-concurso-nacional-de-parrilla","status":"publish","type":"post","link":"https:\/\/jospergrill.com\/es\/poker-gastronomico-en-el-x-concurso-nacional-de-parrilla\/","title":{"rendered":"P\u00f3ker gastron\u00f3mico en el X Concurso Nacional de Parrilla"},"content":{"rendered":"\n<p>Fuego, carb\u00f3n, chuleta y Josper fueron las mejores cartas con las que jugaron los cocineros de los reputados asadores que se enfrentaron en el <strong>X Concurso Nacional de Parrilla<\/strong> de <strong><a href=\"https:\/\/www.sansebastiangastronomika.com\/\">San Sebasti\u00e1n Gastronomika 2019<\/a><\/strong>, y para el que no pudo haber mejor escenario que las maravillosas vistas al mar de las terrazas del Kursaal.&nbsp; Y all\u00ed estuvimos como patrocinadores de uno de los actos m\u00e1s medi\u00e1ticos y populares de un congreso \u00fanico, que se celebra en la cuna de la alta gastronom\u00eda del Pa\u00eds Vasco y que re\u00fane a los mejores chefs y gourmets nacionales e internacionales del momento. El montaje de las ocho parrillas vascas abiertas fue sobre ruedas: en l\u00ednea y con todo el carb\u00f3n para conseguir los mejores resultados de braseado y las piezas de carne, rojas y jugosas, iban cort\u00e1ndose al tama\u00f1o exacto para someterse al fuego.<\/p>\n\n\n\n<p>El medi\u00e1tico y divertido cocinero <a href=\"https:\/\/www.daviddejorge.com\/es\/inicio\"><strong>David de Jorge<\/strong><\/a>, aliado de <a href=\"https:\/\/www.martinberasategui.com\/es\/inicio\"><strong>Mart\u00edn Berasategui<\/strong><\/a> desde hace veinte a\u00f1os, fue el maestro de ceremonias de este d\u00e9cimo aniversario del Concurso Nacional de Parrilla.&nbsp; Poco a poco, el olor a carb\u00f3n se extend\u00eda por la playa de la Zurriola, detr\u00e1s del Kursaal, precediendo al espect\u00e1culo. Chuletas de dos kilos, dos y medio y hasta tres iban coloc\u00e1ndose en nuestras parrillas, donde el fuego las ir\u00eda moldeando, como manos de artesano, hasta alcanzar su punto justo. <\/p>\n\n\n\n<p>En l\u00ednea, los nueve competidores, cada uno acompa\u00f1ado de su empresa c\u00e1rnica habitual. Desde Guip\u00fazcoa llegaba el cuarteto formado por los asadores <a href=\"http:\/\/www.oianume.com\"><strong>Oianume<\/strong><\/a> (Urnieta, con Jos\u00e9 Ir\u00edbar), <a href=\"https:\/\/www.hikatxakolina.com\/es\/\"><strong>Hika<\/strong><\/a> (Amasa-Billabona, con Iosu Larrauri), <strong><a href=\"https:\/\/www.sidrassaizar.com\/\">Saizar<\/a><\/strong> (Usurbil, con Ram\u00f3n Lerchundi) y <strong><a href=\"https:\/\/sutan.eus\/\">Sutan<\/a><\/strong> (Hondarribia, Borja Villanueva), con carnes de <strong><a href=\"https:\/\/www.dastatzen.com\/\">Dastatzen<\/a><\/strong>, <strong><a href=\"http:\/\/www.carnicasgoya.com\/\">C\u00e1rnicas Goya<\/a><\/strong>, <strong><a href=\"http:\/\/www.discarlux.es\/\">Discarlux<\/a><\/strong> y <strong><a href=\"https:\/\/www.makro.es\/productos\/carnes\">Makro<\/a><\/strong>, respectivamente. Bizkaia acud\u00eda con dos asadores bilba\u00ednos: <strong><a href=\"http:\/\/www.restauranteamaren.es\/bienvenidos-al-restaurante-amaren\/\">Amaren<\/a><\/strong> (Aitor del Olmo) y <strong><a href=\"http:\/\/www.txakolisimon.com\/\">Txakoli Sim\u00f3n<\/a><\/strong> (\u00d3scar Garc\u00eda Balde\u00f3n), con <strong><a href=\"https:\/\/fisterrabovineworld.com\/\">Fisterra Bovine World<\/a><\/strong> el primero y <a href=\"http:\/\/valdi.es\/\"><strong>C\u00e1rnicas Valdi<\/strong><\/a><strong> <\/strong>el segundo. Pu\u00f1ados de sal, aceite y los m\u00f3viles con el cron\u00f3metro puesto sobre la mesa. Nuestras parrillas Josper a toda m\u00e1quina. Hab\u00eda que ir emplatando y comenzaron las carreras para llegar hasta la mesa de los quince miembros del jurado profesional: David Ramos, Stjn Oyen, Nandu Jubany, Benjam\u00edn Lana, Xabi Gorrotxategi, Juanjo Arratibel,&nbsp; Amaia Ortuzar, Najat Kaanache, Francisco Carrasco, Maca de Castro, Xabi Ruiz, Clara P\u00e9rez y Mikel Ubarrechena. Todos ellos se tomaron su tiempo para juzgar la calidad de la carne, su punto de cocci\u00f3n, la textura y el sabor. A la par, y como de costumbre, se llevaba a cabo una gran cata y el gran p\u00fablico tambi\u00e9n pod\u00eda emitir su veredicto. La expectaci\u00f3n crec\u00eda a la espera de poder recibir de manos de Benjam\u00edn Lana, presidente de la divisi\u00f3n de Gastronom\u00eda de Vocento, el trofeo al mejor parrillero del X Concurso de Parrilla de San Sebasti\u00e1n Gastronomika. Tensi\u00f3n en el escenario del Kursaal. Un nombre. Y la sonrisa de Asier del Olmo, del asador vizca\u00edno Amaren. Y, por ende, premio a la mejor carne, la del grupo c\u00e1rnico gallego \u2018Fisterra Bovine Word\u2019. \u201cEstamos muy emocionados y sorprendidos del alto nivel de los participantes y de la calidad de las carnes, que es espectacular\u201d, comentaba exultante Asier a una periodista de <em>Diario Vasco<\/em> tras el premio. Del Olmo explicaba el secreto de una buena chuleta: \u201cUna pieza de carne de una vaca r\u00fastica, que tenga tama\u00f1o, que est\u00e9 bien alimentada y, sobre todo, que sea una chuleta bien madura\u201d y se\u00f1alaba su gran satisfacci\u00f3n porque \u201cel tiempo, la textura y la cocci\u00f3n de la carne ha sido perfecta\u201d.<\/p>\n\n\n\n<p>Un concurso de primer nivel que refleja el creciente potencial de la parrilla y las brasas, y que sin duda aun ser\u00e1 m\u00e1s competido en la pr\u00f3xima edici\u00f3n. <\/p>\n\n\n\n<figure class=\"wp-block-image alignwide\"><img
